Make Your Own Meatballs to Celebrate National Meatball Day
Every day is an unofficial meatball day at Buca di Beppo, but March 9th is National Meatball Day for everyone! As if we need a reason to enjoy this Italian staple. Meatballs are one of the top comfort foods in America and it’s easy to understand why. Many adults remember Mom or Grandma making meatballs for them when they were younger. The association of love and comfort brings an emotional connection to the delicious, round treats. Whether you like them over pasta, in a sub, or as a snack on their own, meatballs really do deserve a day of celebration.
What makes a great meatball? Fresh meat mixed with just enough of a binder (usually bread or breadcrumbs) to hold the mixture together but not weigh it down, sprinkled with seasonings (onions, garlic, fresh herbs, cheese, salt, and pepper) divided into small round portions and cooked to perfection. Easy enough right? Well, we’ve made it even easier by sharing our meatball recipe in honor of this special day.
Buca di Bepo’s Magnificent Meatball Recipe
1 ½ pounds ground chuck
¼ cup shredded parmesan cheese
½ cup bread crumbs (preferably Italian)
2 large eggs
6 cloves of garlic
1 teaspoon each of salt and pepper
8 ounces of water
32 ounces of authentic marinara sauce
Step 1: Preheat oven to 350º. In a mixing bowl, combine first 7 ingredients and mix thoroughly. Do not over mix because this will cause the meatballs to become tough. Divide into equal portions and shape into 6 meatballs. Place meatballs on a baking sheet sprayed with cooking spray. Bake until a dark brown crust forms, about 13 to 15 minutes.
Step 2: Transfer meatballs to a Dutch oven. Combine marinara sauce and water, and pour over the meatballs. Cover the dish with aluminum foil and bake 35 to 45 minutes or until meatballs are cooked through. Place the meatballs on a platter. Skim the oil from the top of the marinara and ladle it over the meatballs.
Add your meatball masterpieces to the top of a bowl of your favorite pasta, make meatball sandwiches by hollowing out a baguette and then filling the bread with meatballs and sauce, or enjoy them on their own. Now the only decision you have to make is whether to show your loved ones your culinary skills, or save your yummy creations all for yourself! Buca History 101: From Humble Origins to Global Dining Destination
Often when families are gathered around the dinner table, there are discussions of family history. Children are excited to hear about how grandparents met, where they’ve lived, and how their family grew. Since we consider all of our guests family, we thought we’d share our family story about Buca’s origins, and how we grew from a single location to over 100 restaurants across the globe.
In 1993 the first Buca di Beppo location opened in the basement level (“Buca di Beppo” roughly translates to “Joe’s Basement”) of a downtown Minneapolis apartment building. Emphasizing family-style dining for large groups in a fun atmosphere, the restaurant was an immediate hit with local diners. Originally owned by Parasole Restaurant Holdings Inc., Buca spun off to 5 restaurants in 1996 as the concept grew. Guests were charmed by our themed rooms, thousands of vintage photographs covering every wall in our restaurants, and fun details like recorded sounds of men and women laughing and conversing in Italian in the restrooms. We knew the importance of gathering around the dinner table and integrated a few special tables into each of our restaurants. Each location features a Pope table, which is the restaurant’s largest table, in its own room, named for the centerpiece bust of the Pope. Also, most locations have a chef’s table, usually inset to the wall, directly across from the main kitchen, where the waiters and chefs will chat with guests and bring you samples of the kitchen’s magnificent dishes. These unique rooms, tables, and details drew guests to return over and over again. But of course our food became the star of the show. With each menu item offered à la carte and served family style, our dishes are all shared among each dining party. The portions are plentiful and just like any successful family dinner, no one ever leaves hungry.
Our family of restaurants continued to grow and change. In 1999, when we had 20 restaurants, Buca, Inc. went public on the NASDAQ stock exchange. We steadily added new locations across the United States as demand grew for our delicious Italian inspired dishes. In 2008, Planet Hollywood International, Inc., purchased the Buca chain and in 2011, we moved our corporate office headquarters from the Minneapolis Hyatt Regency hotel to sunny Orlando, Florida. Now, in 2016, we boast 96 restaurants in the United States, 5 restaurants in the United Kingdom, and 2 restaurants in Abu Dhabi! We are so proud of all of our restaurants and so thankful that you choose to bring your family and friends to each of our locations throughout the year. Brighten Up Any Day with Our Chef’s Winter Special: Colorful Penne San Remo
One of our most delicious dishes, our Penne San Remo, has been chosen as our 2016 Winter Chef’s Special. Tasty chicken breasts, artichoke hearts, sun-dried tomatoes and green peas are tossed with Italian penne pasta and white wine to create a light cream sauce. Served family-style with our fresh, homemade bread, this dish will warm you up on even the coldest of winter days. Our chefs tenderize the chicken breasts before breading them in flour and special seasonings. They are then sautéed in olive oil and butter until each side is golden brown. The chicken breasts are removed from the pan and sliced into perfect, bite-sized pieces. Garlic, sun-dried tomatoes, and artichokes are added to the sizzling pan and dusted with flour. Then in goes the white wine, parmesan cheese, and green peas, to create a vibrantly colored pan of goodness. The sliced chicken returns to the pan and is combined with the rich and creamy sauce. When the perfect flavor profile is reached, a Buca chef adds it to a batch of perfectly al dente penne pasta. This beautifully striking dish will arrive at your table full of bold, but well balanced flavors. Pasta, chicken, and vegetables…what’s not to love?

Layers of Love: Buca di Beppo Lasagna
We love when you visit us at our restaurants and let us cater your events, but we know that sometimes you want to make a delicious dinner at home. So we decided that we want to share our legendary lasagna recipe with you! Whether you are cooking for company, a romantic dinner, or a family meal, this recipe is sure to please. Our abundant combination of noodles, sauce, meat, and cheese melt into a bubbly tray of goodness that will make your kitchen smell heavenly and have everyone’s mouth-watering. Add a simple salad, some crusty bread, and your favorite beverage and you have a hearty meal sure to satisfy the biggest appetites and the pickiest of eaters.
1 1/2 cups ricotta cheese
1 whole beaten egg
1/2 tablespoon chopped parsley
2 teaspoons minced garlic
1 box lasagna noodles
3/4 cup marinara sauce
1 1/2 cups Italian cheese blend
2 teaspoons Parmesan cheese
2 cups meat sauce
Preheat oven to 350 degrees. Combine ricotta cheese, beaten egg, minced garlic, and chopped parsley in a bowl to make the ricotta filling. Cook lasagna noodles according to package directions and drain.
Spread 1/4 cup of marinara sauce in bottom of pan. Cover marinara sauce with one layer of lasagna noodles. Evenly spread 3/4 cup of the ricotta filling on the pasta sheet. Sprinkle 1/4 cup Italian cheese blend over the ricotta filling. Cover the cheese with a layer of lasagna noodles and even out the filling under the noodles gently with your hands. Ladle 1 cup of meat sauce over the pasta sheet and spread it evenly over the pasta. Sprinkle 1 teaspoon Parmesan cheese evenly over the sauce. Cover with a layer of lasagna noodles. Evenly spread 3/4 cup of the ricotta filling over the noodles. Top ricotta filling with 1/4 cup Italian cheese blend. Cover the cheese with another layer of noodles and even out the filling under the noodles gently with your hands. Ladle 1 cup of meat sauce over the noodles. Sprinkle 1 teaspoon Parmesan cheese evenly over the sauce.
Wrap top of pan with two layers of aluminum foil. Bake for 1 hour, 25 minutes. Remove from oven, uncover and evenly pour 1/2 cup marinara sauce over the top. Sprinkle 1 cup Italian cheese blend over top. Return to oven for an additional 5 minutes to melt the cheese. Remove from oven and let rest 20 minutes before serving. Garnish with chopped parsley, serve, and enjoy!
It’s Beginning to Look A Lot Like Cocktails
Have you ever found yourself playing bartender at your own party or blowing your budget trying to set up a full bar because you weren’t sure what everyone would want to drink? This year, offer your guests a single signature cocktail to accompany a few basics such as beer, wine, eggnog, and champagne. Offer an array of seasonal fruits and sweets such as apples, oranges, cranberries, crushed cookies, cinnamon sticks, and candy canes to mix up multiple variations of all of your offerings, including your special concoction. Pomegranate Gin Fizz
2 oz gin
1 splash fresh lemon juice
2 splashes pomegranate juice
Club soda, chilled
Mix gin, lemon juice, and pomegranate juice in a shaker with ice. Shake vigorously then pour liquid and ice into glass. Top mix with club soda, stir gently, and add garnish.
Pumpkin Pie Martini
1/2 oz vanilla flavored vodka
1 oz pumpkin spice flavored liqueur
1/2 oz coffee flavored liqueur
1/2 oz butterscotch flavored liqueur
1/2 oz half and half
Wet rim of large martini glass and then dip wetted rim into crushed graham crackers. Add all liquids to a shaker filled with ice. Shake and strain mix into graham cracker rimmed martini glass.
1 ounce vanilla flavored vodka
1 1/2 ounces dark chocolate liqueur
1 1/2 ounces milk
1/2 ounce chocolate syrup
Wet rim of large martini glass and then dip wetted rim into crushed chocolate cookies. Add all liquids to a shaker filled with ice. Shake and strain mix into chocolate cookie rimmed martini glass.
Sweet Seasonal Punch
5 cups chilled orange juice
2 cups chilled lemon-lime soft drink
1 1/2 cups vodka
1/2 cup maraschino cherry juice
1/4 cup fresh lemon juice
Combine all ingredients in a large punch bowl. Ladle punch into glasses containing a few cherries.
White Cranberry Citrus Punch
1 bottle chilled sparkling wine
1 bottle chilled Riesling
1 1/2 cups chilled light white cranberry juice
1 cup fresh cranberries
1 thinly sliced orange
Combine wines and juice in a large punch bowl. Add orange slices and cranberries. Ladle punch into glasses and garnish.
Warm Spiked Apple Cider
6 cups apple cider
4 cups apple brandy
3 cups fresh lemon juice
6 tbs pure maple syrup
Add ingredients to slow cooker on low 2-3 hours before serving. Switch setting to warm once liquid has fully heated.These tried and true recipes are sure to be a successful addition to any party you are hosting this holiday season. A Quick, Delicious Pasta Recipe for Any Night of the Week: Buca di Beppo’s Fresh Garden Pappardelle
Are you searching for the perfect recipe that combines the fresh flavors of the summer farmer’s market with the warm, hearty appeal of pasta? Look no further. We love when you and your family visit us at Buca di Beppo but we know you can’t come to our restaurants every night. That’s why we want to share one of our favorite recipes with you. Think you can’t make a restaurant quality meal at home? Think again! Elegant pappardelle pasta pairs beautifully with some of the harvest season’s most vibrant vegetables and rich, decadent shrimp to produce a visually appealing and deliciously satisfying dish. Easy and filling, this entree is quick enough for a busy weeknight but fancy enough to impress a special someone. Even young, picky eaters will love eating their vegetables and twirling the long, flat noodles in this creamy dish.
2-3 whole carrots
1 whole zucchini
2 ounces olive oil
1 tablespoon minced garlic
4 ounces peeled and deveined shrimp
Coarse salt and pepper to taste
8 ounces heavy cream
1/4 cup freshly chopped basil, plus more for garnish
2 ounces unsalted butter
12 ounces cooked pappardelle pasta
2 tablespoons grated Parmesan cheese
Using a potato peeler, cut carrots and zucchini into thin strips. Cut zucchini strips in half lengthwise. Blanch carrot and zucchini strips in boiling water for 30 seconds, drain water, and set aside.
Heat oil in a sauté pan. Add minced garlic and sauté 30 seconds. Add shrimp, return pan to stove and sauté 30 seconds per side until shrimp turns pink. Season with salt and pepper. Stir in cream and 1/4 cup basil. When everything is incorporated, swirl in butter.
Add carrot and zucchini ribbons, pasta and Parmesan cheese to pan, tossing to coat. Garnish with fresh basil. Yield: 4 servings
